It is the end of June and I find myself in a bit of a hurry to post the latest recipe using “Hey Popcorn Guy’s” choice of popcorn. This time I must admit I am a bit more excited with the offering, it is Maple Walnut Popcorn. I thought well what am I going to do with this? Yes an idea sprang forth and in keeping with a bit of a bed and breakfast sort of thing I chose to use the latest offering in Maple Walnut Almond Granola. I am feeling good about this recipe it is in the oven right now toasting. Please try this recipe, with some fruit and yogurt or maybe just with some fresh berries and milk. Either way you choose to enjoy it, give it a try and see if you don’t come away with a few ideas of your own for using the many different flavors offered by “Hey Popcorn Guy”! 1/3 cup Maple Syrup
3 Tbsp. coconut oil
1/3 cup brown sugar
1 tsp. vanilla
1/2 tsp. salt
3 cups oats, old fashioned (all I had was quick cooking, so that is what I used)
1 cup slivered almonds
1 – 2 cups Maple Walnut Popcorn
Stir together maple syrup, brown sugar, vanilla, and coconut oil. Heat in microwave for 1 minute, stir . Mix together oats, slivered almonds, salt and maple walnut popcorn. Pour maple syrup mix over oat mixture and stir to combine. Toast in a 350 degree oven for 20 minutes, stirring every 5 minutes until golden. Remove from the oven and let cool. Store in an airtight container.
